Healing Potato Salad Recipe

Ingredients:
- 3 medium russet potatoes (or other white potatoes)
- 1/2 cup fresh cilantro
- 1/2 cup fresh dill
- 1/4-1/2 cup red onion (or other type of onion)
- 2 garlic cloves
- 1 avocado
- 1/2 large lemon juiced (or 1 whole small lemon or lime)
- 3 tbs (approx) coconut aminos
- 1/2-1 tsp ground mustard seed
- 1/2-1 tsp smoked paprika
- 1 pinch-1/8 tsp cayenne pepper
- 1 tsp maple syrup
- 1 tbs ground flaxseeds

Instructions:
1. Chop potatoes into bite-sized chunks. Steam for 15-20 minutes or until soft all the way through. Put in a mixing bowl.
2. Finely chop cilantro and dill. Dice onion. Mince garlic cloves. Halve avocado, cross-hatch, and scoop out. Put all of these ingredients in the mixing bowl.
3. Add lemon juice, coconut aminos, ground mustard seed, smoked paprika, cayenne pepper, maple syrup, and ground flaxseeds to the mixing bowl.
4. Toss all ingredients in bowl until thoroughly mixed.
5. Enjoy hot or cold!
