Easy to make Thai Lemongrass Chicken!

Ingredients:

1 lb Chicken tenders (slightly defrosted) 1" slices
1/4 cup Ginger shredded
1/4 cup Shallots minced
1/4 cup Lemongrass minced
1 Tablespoon of vegetable oil

1 Tablespoon of Garlic
1 Tablespoon Sugar
1 Tablespoon Oyster
1/4 cup Chicken stock
pinch of salt and pepper

Top with Scallions and Cilantro
1 Tablespoon of sambal as desired.
1 tsp Cornstarch and water mixture (as needed)

Heat 1 tablespoon of the vegetable oil in wok over high heat.  Season chicken with salt and pepper. Add garlic,  ginger, lemongrass and shallots and stir-fry for a minute. Push all the ingredients to the side to make a space for the chicken. Add the chicken. Spread the chicken out and allow to cook for 2-3 minutes or until starting to brown. Add oyster sauce, sugar, toss everything together. Add the chicken stock and simmer for 3 minutes or until the chicken is cooked through.  If you enjoy spicy food add sambal (optional) and cornstarch and water mixture so that the sauce has thickened slightly. Add scallions and cilantro.  Enjoy! We love to eat it on top of jasmine rice.
