Samosa Recipe
Dough:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon Ajwain (carom seeds)
- 3 tablespoons ghee or oil
- 1/2 cup lukewarm water
Filling:
- 1 cup boiled and mashed potatoes
- 1 onion finely chopped
- 1/4 cup chopped fresh coriander
- 3 green chilies finely chopped
- Masala mix (see below)
Masala Mix:
- 1 tablespoon oil
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon black pepper
- Salt to taste
Instructions:
1. Make the dough:Mix flour salt and Ajwain Add ghee or oil and mix until crumbly. Gradually add water and knead until smooth. Rest for 30 minutes.
2. Prepare the filling: Heat oil and add the Masala Mix. Cook for 30 seconds. Mix with mashed potatoes onion coriander and green chilies.
3. Assemble and fry samosas:
4. Divide dough into small balls.
5. Roll out each ball into a thin circle cut in half and fold into a triangle.
6. Place a tablespoon of filling in the center and apply water to edges and seal.
7. Fry in hot oil until golden brown.
8. Serve:Enjoy your crispy samosas with chutney!
