Ingredients for Degi Style White Mutton Pulao Recipe:
Mutton with bones 1 Kg
1 tbsp Ginger garlic (Adrak Lehsun) paste
4 tbsp Yoghurt (Dahi)
2 tbsp Lemon (Nimboo) juice
1 tsp coriander (Dhuniya) powder
1/2 tbsp fennel (Saunf) seed powder
2-3 bay leaf (Kari patta)
2-3 Sticks cinnamon (Dar chini)
2 Black cardamom (Bari elaichi)
4-6 Green cardamom (Sabaz elaichi)
4-6 Cloves (Laung)
1 Small piece of mace (Javatri)
1 Star anise (Badiyan)
1/2 tsp Cumin (Zeera) powder
1 Nutmag (Jaifal)
1 tsp Salt (Namak)

750 grams Basmati rice (washed soaked 30 minutes)
3 Medium onions (Piyaz)
1 tbsp ginger garlic (Adrak Lehsun) paste
4-6 green chillies (Heri mirch)
1 cup yoghurt (Dahi)
1 tomato sliced (optional)
1/2 tbsp fennel seed (Saunf) powder
1 tsp Cumin (Zeera) Powder
Lal mirch (Red chilli) flakes 1 tsp or to taste
Kali mirch (Black pepper) powder ½ tsp
½ tbsp Garam masala (whole spice) powder
1 tsp Kevera Essence (optional)



Directions for making Degi Style White Mutton Pulao Recipe :
- Add mutton, yogurt, ginger garlic paste, lemon juice, and all whole spice (cinnamon sticks, cumin seeds, black cardamom, coriander seeds, cloves, green cardamom, nutmeg & mace, fennel seeds in a bowl. Give it a good mix and keep it in the refrigerator for 2 hours to enhance the taste.
- In a pan/pressure cooker add marinated mutton, and 2 cups of water and cook mutton until mutton is tender. If you’re using a pressure cooker mutton might take 10-20 minutes of cooking time.  
- Set aside the cooked mutton pieces and stock (if any) for later use.
- In a pan, heat oil and add onion, and fry until onions are golden brown.
- Add, the prepared mutton and fry for 2 minutes.
- Add ginger garlic and cook for a minute.
- Add black pepper, chili flakes, tomato slices, whole spice powder, cumin powder, fennel seed powder, kewra water, green chilies, and salt.
- Add yogurt while stirring and cook until oil separates.
- Now add water bring it to boil and add rice. Cook on medium-high flame until little water remains.
- Cover and steam cook (dum) for 10-20 minutes.
- Delicious degi style Mutton Pulao is ready to serve on eid.
