Raspberry Crumble Bars 🥰 Healthy, vegan & an easy small batch recipe that you’re sure to love!

Ingredients (serves 3-4):
For the crust/crumble
60g @myvegan Oats
30g vegan-friendly flour
30g @myvegan Unflavoured Soy Protein Isolate
1 tbsp vegan sweetener
1/4 tsp cinnamon powder
2 tbsp @myvegan Sugar-Free Maple Syrup
1/4 plant-based butter
60ml plant-based milk

For the filling
150g raspberries
15ml lemon juice
15g organic cane sugar
8g cornstarch

Directions:
Mix the Oats, Protein Powder, cinnamon powder and flour together
Add in butter and Syrup
Mix until forming crumbly dough. If too dry, gradually add in a splash of milk
Once crumble dough forms, pack 2/3 of the dough into a lined baking pan
Press to even it out
Bake for 5 minutes in a 350F/180C preheated oven
Microwave raspberries till softened (approx 30-45 seconds) Add in the rest of the filling ingredients and mix fully Microwave entire mixture for another 20 seconds
Once crust is done baking, add in filling on top
Top with remaining crumble mixture
Bake for another 18-20 minutes in a 350F/180C oven
Slice to serve 💚
