Aloo 65

Ingredients:

Potato 3 pcs
Water as required
Salt 1 tsp
Ginger & garlic paste 2 tsp
Red chilli paste 2 tsp
Salt 1 tsp
Red chilli powder ½ tsp
Lemon juice 1 tbsp
Turmeric powder ½ tsp
Rice flour ¼ cup
Oil for deep frying

Curd ½ cup
Red chilli paste 1 tsp
Ginger & garlic paste 1 tsp
Salt ½ tsp
Turmeric powder ½ tsp
Red chilli powder ½ tsp
Blackpepper powder ¼ tsp
Rice flour 1 tbsp

Oil 1 tbsp
Dry red chilli 2 pcs
Garlic chopped 1 tbsp
Ginger chopped ½ tbsp
Curry leaves 10-15 pcs
Fried potatoes
Black pepper crushed ¼ tsp
Curd mixture
Coriander chopped 1 tbsp

Method:
       
Step 1: Prepare the Potatoes
Start by washing and peeling the potatoes. You have the flexibility to dice them into various shapes, such as big pieces, wedges, small cubes, or dividing them into 8 pieces. Parboil the potatoes in salted water until they are 50% cooked. Once done, remove them from the water and set aside.

Step 2: Marination
In a mixing bowl, combine ginger garlic paste, red chilli paste, salt, red chilli powder, lime juice, and turmeric. Thoroughly coat each piece of parboiled potato with this spicy marinade. For an added crispiness, evenly coat the potatoes with rice flour.

Step 3: Frying the Potatoes
Heat oil in a frying pan over medium heat. Once the oil is hot, carefully add the marinated potatoes. Fry them until they turn crispy and golden brown, ensuring they are cooked through. Transfer the fried potatoes onto paper towels to drain excess oil.

Step 4: Prepare the Spicy Curd Mixture
While the potatoes are frying, prepare the spicy curd mixture. In a separate bowl, mix curd, red chilli paste, ginger garlic paste, salt, turmeric powder, red chilli powder, crushed black pepper, and rice flour. Adjust the spice levels according to your preference.

Step 5: Tempering and Final Assembly
In another pan, heat oil for tempering. Add dried red chillies, chopped garlic, chopped ginger, and curry leaves. Stir-fry until aromatic. Next, add the fried potatoes to the pan along with some more crushed black pepper. Pour the prepared spicy curd mixture over the potatoes and give it a quick mix. Avoid overcooking the potatoes with the curd mixture to maintain their crispiness.

Step 6: Serving
Once everything is well combined and heated through, your crispy spicy potato delight is ready to be served. Transfer the hot and flavorful dish onto a serving plate and garnish with fresh coriander leaves for an extra burst of flavour.
