Ingredients:

* 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
* 1 tablespoon olive oil
* 1 large onion, chopped
* 2 cloves garlic, minced

* 1 teaspoon ground cumin
* 1 teaspoon ground coriander
* 1/2 teaspoon red chili powder
* 1/4 teaspoon turmeric powder
* 1/2 teaspoon garam masala
* 1 cup chopped spinach
* 1 cup chopped cilantro
* Salt to taste
* Water as needed

Instructions:

1. Heat the olive oil in a large skillet over medium heat.
2. Add the chicken and cook until browned on all sides.
3. Add the onion, garlic, ginger, cumin, coriander, chili powder, turmeric, and garam masala. Cook for 5 minutes, or until the spices are fragrant.
