Bamia bil Zeit or Lebanese okra stew

okra is one of the Lebanese dish easy to prepare with meat or vegetarian.. you can serve with plain rice or with vermicelli.
but us they eat it with Arabic bread


INGREDIENTS:

800 grms frozen bamia or okra
2 medium tomato peeled
1 big onion
6 small cloves garlic
1/4 cup lemon juice
2 table spoon olive oil
1 table spoon tomato paste plus
1/2 cup water
salt to taste
all spice
chopped coriander with or without garlic
fresh or you can prepare ahead and keep in freezer

in a casserole put onion you minced with 2 table spoon olive oil just stir fry in medium heat you don't need to make it brown.
after add the garlic cloves, tomato peeled and cut and the coriander mix it well no need to cook and add the okra.
don't mix with spoon anymore just leave it as it is don't add water nor sauce.cover the casserole cook it in very low fire after 15 or maybe 20 minutes you will see it begins to defrost and it has little sauce or juice.now you can add the tomato sauce diluted with 1/2 cup of water and the 1/4 cup of lemon juice.cover it again and let it boil less tha medium heat.if you are afraid it burn or stick down move your casserole left and right in half circle or you carry the casserole and being to move it try to move that the tomato down will be on top of your okra.. after close again you can taste the salt if needed you can add and lemon juice here I add lemon juice coz they like it ..just let it in low fire until it Cook.. when you see all are soft okra and garlic peak it with fork you will see it is very soft.thwn it's cook and read to serve..
you can serve it with plain rice or rice with vermicelli or with Arabic bread .. thanks for watching .
