My mother would make Bologna
My mother would make Bologna Salad when I was a kid. She would always add ground up boiled eggs to extend it so that it would feed us kids more economically. It is like Ham Salad but made with bologna, and it has always been a favorite of mine. I like it much better than Ham Salad. I once worked at a Service Deli in a grocery store that make most things homemade. They would make a meat salad using all the ends of anything. Such as the ends of turkey, ham, roast beef and etc just like this. The store deli would call it Meat Salad, it was not very good and would vary in flavor every time you made it.
Ingredients:
8 ounces cheddar cheese
16 ounces beef bologna
1/2 cup sweet pickle relish
1 cup of mayonnaise or so
This can also be made in a food processor to cut up the bologna and using grated cheese. Easy to do, and a very economical lunch for work.
Optional ingredients:
4 hard boiled eggs
onion chopped or ground up
dill pickles chopped or ground up
