Aloo Bhindi Recipe
Ingredients:
1 cup bhindi (okra), washed and chopped
1 cup potatoes, peeled and diced
1 large onion, chopped
2 green chilies, finely chopped
1/2 teaspoon turmeric powder
1 teaspoon cumin
1 teaspoon coriander powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
2 tablespoons cooking oil (preferably Mustard oil)
Kasuri Methi
Fresh coriander leaves for garnish
Instructions:
Prepare the Vegetables:

Wash and chop the bhindi (okra) into small pieces.
Peel and dice the potatoes into small cubes.
Cooking the Vegetables:

Heat oil in a pan on medium heat. Add Cumin Seeds and Hing and then add chopped onions and sauté until they turn golden brown.
Add green chilies and Potatoes. Sauté for a minute until the raw smell disappears.
Add Spices:

Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
Lastly Add Bhindi

Add diced potatoes and chopped bhindi (okra | Lady finger). Mix well to coat the vegetables with the masala.
Cooking the Aloo Bhindi:

Cover the pan with a lid and let it cook on low-medium heat. Stir occasionally to prevent sticking.
Cook until the potatoes and bhindi are tender. This may take about 15-20 minutes.


Once the vegetables are cooked, mix well. Cook for an additional 2-3 minutes.
Garnish and Serve:

Garnish with fresh coriander leaves.
Serve hot with roti or rice.
