A famous delicacy of south india,gongura rice is so easy to prepare and tastes delicious..can be prepared in minutes of time

Ingredients:
Gongura (sorrel leaves)             5 bunches
Salt                                                  to tate
Oil                                                    3 tbsp
Mustard seeds                             ½ tsp
Cumin seeds                                ½ tsp
Red chilli                                        3 no’s
Chana dal                                      1 tsp
Urad dal                                         1 tsp
Cashew nuts                                10 no’s
Hing                                                pinch
Green chilli                                    3 no’s
Onions (sliced)                             1 no’s
Coconut (grated)                         ¼ cup

Method :
Heat oil in a pan and add methi seeds, sorrel leaves,salt, mix it and  cook till gongura leaves are tender and cooked.
Let it cool down make it into a smooth paste.
In the same pan heat oil and add mustard seeds, cumin seeds, red chilli, chana dal, mix it once and add urad dal, cashew nuts, hing, green chilli, sliced onions, salt, turmeric, curry leaves, saute it for 2 minutes then add gongura paste, saute it for a minute and add cooked rice mix it well .
Finally add freshly grated coconut mix it well.
Serve hot.
