Vegetable Fritters with Garlic Chive Dip - Gluten Free!

This tasty vegetable fritter recipe is gluten free!  Packed with courgette, carrots and onions. Its the perfect appetizer or snack for Summer. The garlic chive dip uses coconut yoghurt so it's deliciously dairy free.

Recipe:
For the Fritters
x1 large carrot, grated
x1 courgette, grated
1 shallot, grated
1 garlic clove, grated
1 egg, beaten
70 g gluten free plain flour
2 spring onions, chopped
1 tsp cumin seeds
olive oil to cook
For the dip:
1 garlic clove, minced
1 tbsp chives, finely chopped
3 tbsp coconut yoghurt/ dairy free
Method:
Firstly grate the courgette and add into a bowl. Scatter over 1/2 tsp salt and leave for 10 minutes while you prepare the rest of the ingredients. After squeeze out any excess water from the courgette and discard.
Tip the courgette into a mixing bowl, add in the carrot, shallot, garlic and spring onions. Mix well.
Add in the cumin seeds and season with salt. Add flour and mix well. In goes the egg and gently mix.
To cook the fritters, add in 1 tbsp olive oil and dollop 1 tbsp of fritter mix into the pan, try not to overcrowd the pan for an even cook.
Flip over so golden brown on both sides and cooked throughout.
To make the dip combine the yoghurt with chives and garlic, season well.
Serve the fritters with the lovely dip.
