This recipe is the simplest version of Igado, a popular Ilocano dish from the northern part of the Philippines. Made from pork shoulder strips ( kasim ) and pork liver strips cooked in soy sauce and vinegar mixture with vegetables like green and red bell pepper, carrots and green peas. Other version of igado uses pig's innards such as heart, kidney and intestines. INGREDIENTS: For the pork marinade: - 3/4kg pork shoulder ( kasim ), cut into strips - 1/4 cup soy sauce, ajust according to your taste - worcestershire sauce ( optional ), a few drops - ground black pepper to taste - 1/2 large size onion, minced For the pan fried liver: - 1/2 kg pork liver, cut into strips - cooking oil - 1/2 tsp salt - 1/4 tsp ground black pepper - 1/4 tsp garlic powder - 1/4 tsp onion powder - 5 cloves garlic, minced - 1/2 large size onion, minced - 2 to 3 pcs dried bay leaves ( dahon ng laurel ) - 2 tbsp vinegar - 1 large size carrots, cut into batonnets - 1 small size red bell pepper, cut into strips - 1 small size green bell pepper, cut into strips - 1 cup frozen green peas, ( you can use green peas in can ) - water, if needed Thank You For Watching!
