Here’s the delicious diet lunch box recipe with low calories for 5 days. It’s a series of diet lunch box recipes full of healthy and tasty meals, which consists of the tofu noodle salad, mixed bean salad, fruits, vegetables, rye bread, and short pasta. How about starting it together? 🍱 One Week’s Vegan Diet Lunchbox / 5 servings / Medium / 30 min Tofu noodle salad ingredients: tofu noodles 300g Sesame dressing: 1 tablespoon of sesame seeds, 1.5 tablespoons of vegan mayonnaise, 1 tsp of soy sauce, 1 teaspoon of lemon juice, a half teaspoon of unrefined sugar, some pepper Oriental Dressing ingredients: 1.5 tablespoons of soy sauce, a half teaspoon of minced garlic, 1 tablespoon of olive oil, 1 teaspoon of lemon juice, 1 teaspoon of unrefined sugar, 1 teaspoon of sesame oil, some pepper Mixed Bean Salad ingredients: soaked chickpeas 130g, canned kidney beans 100g, soaked lentils 130g, canned corn 100g, a quarter of an onion, 5 leaves of kale (optional) Ingredients for seasoning: 2 tablespoons of tomato purée, 2 tablespoons of Sriracha sauce, 4 tablespoons of olive oil, 2 tablespoons of lemon juice, a half tablespoon of salt, some pepper Ingredients for side dish (optional on your preferences) : 5~6 cherry tomatoes, 10 leaves of kale, 3~4 slices of rye bread, a handful of short pasta, ⅙ carrot, ¼ onion, some blueberries, some celery sticks [Mixed Bean Salad] 1. Boil soaked chickpeas and lentils in different pots with water covering them for 10~15 minutes. (tip. Soak chickpeas for 6 hours, and lentils for an hour.) (tip. If you use the canned ones, you don’t have to boil them.) 2. Chop the onion into tiny pieces. Cut the kale into bite-size pieces. Mix the mixed bean salad seasoning ingredients in a bowl. 3. Add the boiled lentils and chickpeas, corn, kidney beans, chopped onion in a large bowl. Mix them with the seasoning ingredients and kale altogether to make the mixed bean salad ready. (tip. If you want it saltier, add some salt.) (tip. If you replace the kale with coriander – only when it’s desired – you can enjoy another offbeat flavor.) [Tofu Noodle Salad] Mix the sesame dressing and oriental dressing ingredients in different bowls. (tip. Sesame dressing with crushed sesame seeds tastes much nuttier.) [Side Dishes] Cut the cherry tomatoes, kale, carrot, cucumber, and celery into bite-size pieces. (tip. You can use various vegetables and fruits based on your preference.) Boil the pasta with water covering it in a pot for 10 minutes. Cut the rye bread into your desired size. [Lunch Box-Packing Tip] Plate the mixed bean salad, tofu noodles, vegetables, short pasta and rye bread in the lunch box. Include the sauce for the tofu noodles together. (tip. You can tweak the vegetables in your lunchbox according to your preferences.) Style a Dish.
