To Make Mushroom Marinade

Mushroom - 400 Gms
Turmeric Powder - 1/2 Tsp
Red Chilli Powder - 1 Tsp
Cumin Powder - 1 Tsp
Coriander Powder - 1 Tsp
Pepper - 1/2 Tsp
Ginger Garlic Paste - 1 Tsp
Curd - 2 Tbsp
Fried Onion -1/2 Cup
Mint Leaves - 1 Cup
Coriander Leaves - 1 Cup


To Make Mushroom Biryani

Basmati Rice - 1 Cup ( 250 Ml )
Oil - 2 Tbsp
Ghee - 1 Tbsp
Whole Spices
( Cinnamon, Cloves, Cardamom, Star Anise,
Bay Leaf, Mace, Fennel Seeds - 1 Tsp )
Onion - 2 Nos
Green Chilli - 3 Nos
Tomato - 2 Nos
Diluted Coconut Milk - 2 Cup
Salt

Method:

1. Wash and clean the mushrooms. Cut them into slices and put in a bowl.
2. Add salt, turmeric powder, red chilli powder, cumin powder, coriander powder, pepper powder, ginger garlic paste, curd, fried onion, mint leaves, coriander leaves and mix well.
3. Let the mushrooms sit for 30 mins.
4. Take a wide pan, add oil and ghee.
5. Add cinnamon, cloves, cardamom, star anise, bay leaves, fennel seeds and sliced onions.
6. Add slit green chillies and saute the onions until they are nicely browned.
7. Add sliced tomatoes, marinated mushrooms, mix well and cook for 5 mins.
8. Mix coconut milk and water in a bowl. Add it to the pan.
9. Check for seasoning and add salt/red chilli powder if required.
10. Once the water starts bubbling, add soaked basmati rice and cook on a medium flame for 20 mins.
11. Garnish the biryani with chopped coriander leaves and serve the biryani hot with raitha and gravy by the side.
