RECIPE

Serves 4

Ingredients -

1 butternut squash
80g / 2/3 cup gram (chickpea) flour Big pinch salt
50ml / ½ cup sparkling water
Drizzle of vegetable oil
25g fresh tarragon

Method -

Peel the squash and remove the seeds, then grate and dry it using a paper towel to remove any extra moisture
Mix all other ingredients together in a bowl (using just half the tarragon), then stir the grated squash into the mix
Set aside for 5 mins to allow the squash to absorb the mixture
Add the oil to a pan - just enough to coat the base - and heat
Create each patty from about three tablespoons of the mixture and drop them carefully into the pan. Fry for five minutes on each side
When they are crisp, remove them from the pan, drain the excess oil on a paper towel, and serve with the rest of the tarragon and a sprinkle of salt
