Pressure Canned Baked Beans Recipe

Dive into the comfort of homemade baked beans with this versatile recipe that you can bake in your oven or cook in an Instant Pot before canning to preserve the deliciousness. Here’s everything you need to make your own batch:

Ingredients:
- 2 lb Northern or navy beans
- 1 1/2 tsp Salt
- 2 1/2 cups Brown sugar
- 1 1/2 tsp Black pepper
- 1 Large onion, diced
- 1 lb Bacon, cut into pieces
- 1 tsp Dry mustard
- 1 Tbls Molasses (optional)

Oven Directions:
1. Preheat your oven to 250 degrees Fahrenheit.
2. Combine beans, salt, sugar, pepper, onion, bacon, mustard, and molasses in a large oven-safe pot.
3. Add water until it's just above the beans. Stir well.
4. Bake covered with the lid slightly ajar for 8 hours, adding water as needed.

Instant Pot Directions:
1. Rinse beans and add to Instant Pot with water covering 2 inches above.
2. Cook on high pressure for 10 minutes. Let pressure release naturally for 10 minutes, then quick release.
3. Add remaining ingredients and enough water to cover. Cook on high pressure for 45 minutes.

Canning Directions:
1. Prepare your jars and pressure canner.
2. Fill jars with cooked beans, leaving a 1-inch headspace.
3. Process jars at 10 pounds of pressure, adjusting for altitude: 75 minutes for pints, 90 minutes for quarts.
