Sandeep Bhosle had to give up his gaddo (cart) a couple of years ago and move to a tiny stall on Dr Atmaram Borkar road in Panjim. But that hasn’t diminished the popularity of his ros omelet in any manner whatsoever. When the lights in his shop come on, the street food scene here comes alive. Dining off tables and stools arranged on the sidewalk, Sandeep’s clientele is a democratic mix of Goa, from the elite to the daily wage earners, for whom a plate of his xacuti gravy laden egg dish is bliss and the sort that Sandeep says, “guarantees a good night's sleep.” Hope you enjoy this street food episode.
