Dahi Kebabs are a melt in the mouth delicacy.
Made with hung curd and a gentle array of  beautiful Indian spices
keeps you coming back for more and more and more......
to make 12 dahi kebabs

for the hung curd
take 1 1/2 litre of milk
boil it and let it come to room temp
mix in about 1 tablespoon of home made dahi/yogurt
stir for a whole minute(or as I do it 100 times)
then keep it for a minimum of 12 hours to make dahi /Yogurt

now take a big muslin cloth or a white men's handkerchief
put a collander/vessel strainer on top of a vessel on which it fits
put the cloth/hndkerchief on the collander put in the thick dahi /yogurt you made ...now tie up the sides and with a chord or string
tie it up with your vessel below it ..to catch all the liquid from the dahi...keep this for a minimu of 12 hours ..then keep it in your refridgerator for atleast 2 to 3 hours  and now you can use this amazing hung curd

other ingredients
1 small onion very finely diced
1 1/2 teaspoon of roasted jeera/cumin powder
which you can make at home
(just dry roast some cumin seeds/jeera in a pan on slow to medium heat for about 1/2 minute till you get the aroma of the cumin/jeera
switch off the gastop ..let it cool ...grind it in a dry mixer)
a paste of 1/2 inch of ginger and 2 light green chillies
salt to taste
Bread crumbs
some water in a plate
2 tablespoons of rice flour /corn flour
