What's for Dinner? Chilaquiles, Classic Mexican Comfort Food!

www.noreenskitchen.com Greetings! Today I found bone on chicken breasts for 97cents a pound! Decided to make Chiliquiles. This classic Mexican dish finds it's origins in Spain and traveled across the globe with immigrants from Europe and settled in Mexico/South and Central America. If you travel you will find a version of this in many of the Latin American Countries. Simple peasant food this incorporates the traditional corn tortillas with cheese, seasoned tomato sauce and sometimes eggs or like I do with shredded chicken to make a hearty, satisfying casserole that is good hot, at room temperature or cold. Reheat the leftovers in the microwave and top them with a fried egg and some of the left over sauce for a wonderful breakfast treat! I hope you try this and I hope you enjoy it.
