4 cups full-fat milk

1 cup palm jaggery (nolen gur), grated

Instructions:

Prepare the Milk: Begin by boiling the milk in a heavy-bottomed pan. Stir continuously to prevent it from sticking to the bottom. Reduce the milk to half its original volume to achieve a thick consistency.

Sweeten the Milk: Once the milk is reduced, add the grated palm jaggery. Stir until the jaggery is completely dissolved and the milk takes on a lovely caramel color.

Cool the Mixture: Remove the pan from heat and allow the milk to cool down to lukewarm - the perfect temperature for the yogurt culture to thrive.

Add the Starter: Whisk the plain yogurt to ensure it’s smooth, then mix it into the lukewarm sweetened milk. Stir gently to combine.

Set the Doi: Pour the mixture into earthenware pots to enhance the flavor with an earthy essence. The pots also help in thickening the yogurt due to their porous nature.

Ferment the Yogurt: Place the pots in a warm place for at least 8-10 hours to allow the yogurt to set. Avoid disturbing them during this time.

Chill and Serve: Once set, refrigerate the Mishti Doi to chill. Serve cold, garnished with a sprinkle of jaggery or dry fruits if desired.

Tips:
