Eggless Lemon Cake Recipe:
Maida - 1 ½ Cups
Lemon Zest - 2 nos
Baking Powder - 1 tsp
Baking Soda - ½ tsp
Oil - ¾ Cup
Caster Sugar - 1 ½ Cups
Curd - 1 Cup
Lemon Juice - 5 tbsp
Milk - ¼ Cup
Vanilla Essence - ½ tsp
Butter Cream:
Butter (unsalted) - ½ Cup
Icing Sugar - 2 Cups
Milk - 1 tbsp
Lemon Juice - 1 tbsp
Vanilla Essence - ½ tsp
Cooking Instructions:
1. Preheat an oven to 180C.
2. In a bowl, take the maida and grate the zest of 1 lemon. Add the baking powder, baking soda and mix well.
3. In another bowl, combine the oil and sugar and mix well. Add the curd and combine well.
4. Add the milk, lemon juice and vanilla essence.
5. Combine the wet and dry ingredients to make a smooth batter.
6. Pour in a greased and lined baking pan and bake for 45 mins at 180C.
7. To make the buttercream: whisk the room temperature butter with the sugar until light and fluffy.
8. Add the vanilla, milk and lemon juice and mix well.
9. Apply the buttercream on the cake only after completely cooling.
