Guava cheese (locally called Perad) is a special sweet made mostly during Chrismas. With just 3 ingredients, the only effort required is to make sure it is constantly stirred, but the end result is worth all this effort!

Detailed recipe:
Ingredients:
1 ½ cup guava pulp (depends on how big and how many guavas are used.)
1 ½ cup sugar (same as the guava pulp 1:1 ratio)
1 tbsp lime juice

Method:
• Wash the guavas, cut into halves, scoop out the seeds and keep aside. There should not be any seeds in the pulp
• Place the halved guavas in a small container and steam it in a steamer until mushy (12 – 15 mins).  Keep aside
• Add seeds in the same container and steam for 10 mins and keep aside to cool
• Pass the seeds through a sieve and extract the pulp
• Measure the pulp and the seed extract.
• Blend the pulp to a smooth paste. Transfer to a non-stick or thick bottom pan or vessel.
• Add the seed extract
• Add equal amount of sugar as the pulp. (whichever cup you are using to measure, use the same cup for sugar measurement)
• Add lime juice
• Cook it on a low flame. Take a long handle spatula to stir. (the mixture tends to splutter)
• Keep stirring continuously until it leaves the sides.
• Check if it is ready by dropping half teaspoon of mixture in cold water and leave it for 1 min.
• If it forms a ball, the mixture is ready.
• Transfer it to the greased tray and spread it evenly.
• Once cooled, cut into desired shapes.
• Store it in a air tight container.
