How To Make Chicken Chimichangas
1 brown onion, thinly sliced
1 red pepper, thinly sliced
3 tbsp oil
2 chicken breast fillets, sliced
1 tomato, finely diced
3 crushed garlic cloves
1 tsp salt
1/2 tsp black pepper
1 tsp ground chilli
1 tsp ground cumin
2 tbsp chopped fresh coriander
1 can refried beans (400g)
1/2 cup chicken stock
4-5 tortillas
2 cups shredded cheese
serve with sour cream, guacamole and extra shredded cheese
