This Half Homemade recipe from David Venable's cookbook, Comfort Food Shortcuts, uses boxed cake mix, eggs and melted ice cream to create one of the tastiest (and most beautiful) cakes you'll ever try. INGREDIENTS:
Cake:
Vegetable oil spray
1 box strawberry cake mix
2 cups melted strawberry ice cream
3 large eggs
Glaze:
3/4 cup confectioners' sugar
4 teaspoons milk
6 fresh strawberries
DIRECTIONS:
1. Heat the oven to 350°F. Generously coat a bundt pan with vegetable oil spray.
2. Put the cake mix, melted ice cream and eggs in the bowl of an electric mixer. Mix on medium speed until the batter is thick and well blended. Evenly pour the batter into the prepared pan.
3. Bake the cake for 30 to 35 minutes, or until a toothpick inserted in several places comes out clean. Remove the cake from the oven and let cool on a wire rack for 30 minutes. Invert the cake onto a serving plate and let cool completely.
4. To make glaze: whisk together the confectioners' sugar and milk in a bowl until smooth and without any lumps. Pour the glaze on the cake, making sure it drizzles all over.
Garnish with fresh strawberries.
