Determine how many stitches make up an inch, multiply that number by the inches of your head, then you will know how many stitches to make when you first cast on.

My head is about 20 inches and my stitch turned out to be 2 stitches per inch, therefore, I multiplied 20 x 2 to get 40 stitches for my cast on.
