INGREDIENTS (Imperial):

For the eggless wash:
1oz brown sugar
1oz water

For the dough:
0.8oz brown sugar (2 tbsp)
0.2oz salt (3⁄4 tsp)
2.8oz water (5 tbsp)
4.2oz soy milk (1⁄2 cup)
14oz all-purpose flour
0.3oz instant dry yeast (2 1⁄2 tsp)
3.5oz avocado, mashed

For the topping:
rolled oats, sesame seeds, or other seeds

When measuring ingredients, make sure that all the measurements are level. This means discarding the ingredients that rise above the rim of the measuring cup, tsp, tbsp .etc. The back of a knife works perfectly for this.

INGREDIENTS (Metric):

For the eggless wash:
30g brown sugar
30g water

For the dough:
25g brown sugar
5g salt
80g water
120g soy milk
400g plain flour
8g instant yeast
100g avocado, mashed

For the topping:
rolled oats, sesame seeds, or other seeds

TIPS:
- Instant dry yeast can be substituted with 0.7oz of fresh yeast, or with 0.4oz of active dry yeast (11⁄2 tbsp), which should be activated as instructed on the packet.
- To bring the buns back to their original consistency, wrap them in aluminium foil and reheat them in the oven at 100°C (210°F) for 6 to 8 minutes.
