What Is A Kitchen Porter
The kitchen porter is a very important team member of the kitchen brigade. The kitchen porter can also be known as a steward, KP. This job role is available in most kitchens from small pub kitchens, which may have 1 porter and the chefs helping out on busy days.
All the way up to high-end 5-star luxury hotels, in these places the kitchen porter will be part of a kitchen porter team. The team will be run by managers and can consist of 20 porters or more. The size of the team is so large due to the large hotels having different restaurants around the hotel, which will all need porters.
Kitchen Porter Duties
The kitchen porter will be doing the cleaning, these jobs include: sweeping floors, mopping floors, emptying bins and washing up pots and plates. Generally, the plates, cutlery, and cups will be run through a dishwashing machine. The large pots and trays will be washed at a sink.
The machines can be loud and the porter will need to wear a waterproof apron and many porters will wear noise prevention equipment on their ears. The floors will need to be kept clean at all times by regular sweeping of the kitchen floors. The porters need to be aware of the health and safety of the kitchens.
When a porter starts a new position in the team they need to be trained on the equipment. Equipment the kitchen porter may be cleaning includes ovens and brat pans. The bins will need to be emptied when they are full or when instructed to do so.

Kitchen Porter Salary
The salary of a kitchen porter is one of the lower salaries in the kitchen team. However, this can be the same as a commis chef! Some places pay their kitchen porters by the hour and there can be a lot of hours available. A porter in a busy hotel could do 60-80 hours per week being paid hourly.
By choosing to put in the extra hours even though it may be a minimum wage job the salary can build up with hard work. By becoming a porter there are routes open, and many kitchen porters go on to take up commis chef jobs or other positions in the place they are working. Many of the best chefs I have worked with started as kitchen porters and worked their way up the kitchen brigade system.
