Swedish Almond Cake - Today I'm going to bake a delicious Swedish almond cake that you probably saw at Ikea, it's called Almondy. The recipe is without flour, so the cake does gluten free. This simple almond cake is very easy to make and it just tastes amazing! And of course much better than the original, bought in the freezer. So bring a piece of Sweden home soon!

🧁ingredients:
For the cake:
   - 4 Eggs whites
   - Pinch Salt
   - 1/2 cup  (100 g) Sugar
   - 140g whole toasted almonds
For the cream:
   - 4 Egg yolks
   - 1/4 cup (50 g) Sugar
   - 1 teaspoon Vanilla extract
   - 100ml Heavy cream
   - 2/3 cup (150g) Butter, softened
For decoration:
   - Sliced almonds, toasted
👩‍🍳Instructions:
Make the cream:
✅ in a bowl, whisk egg yolks with sugar and vanilla, set aside.
✅ In a small saucepan bring the cream to a gentle simmer. Gradually pour hot cream into the egg yolk mixture while constantly whisking. Transfer the mixture back into the saucepan and cook until thicken (watch in video), stirring constantly. Remove from heat, transfer the mixture into a bowl, cover in contact and place in the fridge for 1 hour.
✅In a large bowl beat softened butter until it will fluffy and pale in color.
✅Add chilled cream and whisk until combined. Add 3-5 tablespoons at a time.

Make the cake:
🔥 Preheat oven to 170C (340F).  MODE: Upper and Lower heat
Grease two 7-inch (18cm) round cake pans with butter, line bottom with parchment paper. Set aside.
✅ In a food processor, process the almonds and half of sugar (50 g) into fine crumbs.
✅ In a large clean bowl, place egg whites and pinch of salt. Beat the egg whites with a pinch of salt until foamy, then gradually add the another half of sugar (50 g), beat until stiff peak form.
✅ Gradually fold ground almonds into the meringue. Do not over fold.
✅ Divide the batter between prepared pans. Spread evenly.
🔥Bake for 20-25 minutes until golden brown in color. Let cool 5 minutes on the pan, then flip gently on to the rack and peel the paper. Cool completely before assembling.

Assemble the cake:
✅Place 1 cake layer on a place or a cake stand, the spread a layer with 1/3 of cream, then top with the second layer cake. Spread another 2/3 of cream on top and sides of the cake.
✅toast almond flakes on a dry pan or in the oven, allow them to cool. Then, decorate the side and top of the cake with toasted almond flakes.
✅Keep the cake in the fridge for at least 2 hours before serving.


❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!
