Ingredients:
To prepare Ratlami Sev, you'll need the following ingredients:
- 3 cups besan (chickpea flour)
- 1/2cup hot oil
- 1 teaspoons carom seeds (ajwain)
- 1 teaspoon black pepper powder
- 1 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon asafoetida (hing
- Salt to taste
- Water for kneading
- Oil for deep frying

Instructions:
Step 1: Prepare the Sev Dough
In a mixing bowl, combine besan,  carom seeds, black pepper powder, red chili powder, turmeric powder, asafoetida, , hot oil, and salt. Mix well to ensure all the spices are evenly incorporated.

Step 2: Knead the Dough
Gradually add water to the dry ingredients and knead it into a stiff dough. Ensure that the dough is firm yet pliable. Let the dough rest for about 15-20 minutes.

Step 3: Prepare the Sev Press/Maker
Attach the sev press/maker with a fine sev plate. Grease the inside of the sev maker with a little oil to prevent the dough from sticking.

Step 4: Shape and Fry the Sev
Divide the dough into small portions and fill the sev maker with one portion at a time. Heat oil in a deep pan for frying. Once the oil is hot, press the sev maker over the hot oil, moving in a circular motion to form concentric circles. Fry until the sev turns golden brown and crispy. Repeat the process with the remaining dough portions.

Step 5: Drain and Cool
Once the sev turns crispy, remove it from the oil using a slotted spoon or tongs. Allow the excess oil to drain off, and transfer the fried sev to a paper towel-lined plate to cool.
