CHICKEN AFRITADA is a Filipino savory chicken dish stew using tomatoes as its sauce. This dish originated during the Spanish time; thus, this is an old and traditional recipe. "Afritada"  or "fritada" in English means to fry.
Pan frying the marinated chicken is the core step in the preparation of this dish
It is very easy to prepare which makes it as a regular dish.  A stand- alone dish often served with steamed rice.

CHICKEN AFRITADA can also be served during special occasions because of its taste and appearance. It is sometimes a preferred choice over the spicy Chicken Caldereta.

CHICKEN AFRITADA
Ingredients:
One half chicken, cut-up and marinated in 2 T soy sauce and
1T kalamansi or lemon juice
5 cloves garlic, minced
1 medium onion, sliced thinly and diagonally
1 C diced tomatoes
5 pcs. sweet peppers, cut it strips
1 medium carrot, cut in chunks
2 medium potatoes, cut in chunks
1 small can green peas
Cooking oil
Flavourings:
A splash fish sauce
A pinch chicken powder
1 T sugar
Salt and pepper to taste
