Elote is an iconic street food from Mexico that has taken the world by storm! Grilled fresh corn until lightly charred, and then slathered all over with a savory cream sauce, and then topped with Cotija cheese, fresh cilantro, and freshly squeezed lime juice! Heavenly!

8 ears of fresh sweet corn, husk on
1/2 cup Mexican crema (or sour cream)
1/4 cup mayonnaise
3/4 cup crumbled Cotija cheese, divided
1/4 tsp cayenne pepper
Juice of one lime
3/4 tsp salt
1/2 cup fresh cilantro, chopped
Lime wedges, for garnish
