Having a good vanilla sponge
Having a good vanilla sponge cake recipe up your sleeve is the ultimate weapon to create a no fail delicious cake! My only problem with sponge cakes, is often they can have an eggy taste and be a little on the drier side. So I took it into my hands to create the ultimate sponge cake recipe that tastes delicious, is super moist and stays like that for days! This sponge cake is also slightly on the firmer side, but still super light and fluffy, making it a great option for layer cakes/large wedding cakes!

INGREDIENTS LIST:
- 1/4 cup (54g) canola or any unflavored vegetable oil
- 1/4 cup (56g) melted butter
- 1/2 cup (100g) milk
- 7 egg whites
- 4 egg yolks
- 1 cup (200g) sugar
- 1 cup (125g) flour
- 2 tablespoons (15g) corn starch
- 2 tsp (8.4g) vanilla
Bake in a water bath at 160C fan forced for 1 hour.
