This gorgeous Easter cheesecake is easier to make than you think.

Crust:

Graham wafer crust:
1 cup graham cracker crumbs
2 tbsp sugar
1/4 cup melted butter or margarine

Almond crust:
1 cup ground almonds
1/4 cup sugar
1/4 cup melted butter

For both recipes: Combine the sugar, crumbs or almonds and melted butter together until combined.
Press into the bottom and slightly up the sides of a 9 inch springform pan.
Bake at 350F for about 10-15 minutes until edges are brown, remove from oven and allow to cool.

Cheesecake:

4- 8oz(250g) packages of cream cheese at room temperature.
If you cream cheese is not happy, tell it silly jokes or let it watch old Monty Python videos on youtube.
1 1/4 cups sugar (300g)
3 tbsp cornstarch (20g)
2 tsp vanilla extract (10ml)
2 tsp grated lemon zest
1 large egg yolk
3 large eggs
3/4 cup sour cream

Place the cream cheese in a large bowl and blend until smooth.
Gradually add in the sugar and blend until light and fluffy.
Add eggs and egg yolk one at a time until blended.
Blend in vanilla extract, cornstarch and lemon zest.
*NOTE due to crappy editing, I didn't show putting the cornstarch in the mix, but I did****
Blend in sour cream.

If you want different coloured layers, divide the batter and tint each portion.
Spoon filling onto the baked and cool crust.
Bake in a water bath for about an hour at 325F.
Shut the oven off, crack the door open and let cool in the oven for about an hour.
Remove from oven and cool completely.
Chill for several hours or overnight.
Decorate as desired.
