Materials

1 cup quinoa
1 glass of water (200 ml)
1 tablespoon tomato paste
1 cucumber
1 large tomato
1 tea glass of crushed walnuts
Half bunch of parsley
2 cloves of garlic
2 spring onions
3-4 curly leaves
juice of 1 lemon
4 tablespoons of olive oil
1 teaspoon salt
Half a teaspoon of black pepper
1 teaspoon of chili pepper
1 teaspoon cumin

Preparation of

First of all, let's add 1 glass of quinoa into the strainer placed in a suitable container. Add enough water to cover it and let it sit like this for about 2 hours.
At the end of the time, wash it with plenty of water and then put the quinoa in a pot. Add 1 glass of water at room temperature, close the lid of the pot and cook the quinoa over low heat for about 15 minutes until the water evaporates.
When the quinoa has completely absorbed its water, let's mix it with a spoon or fork. Add 1 teaspoon of chili pepper, 1 teaspoon of cumin, 1 teaspoon of salt, half a teaspoon of black pepper and 2 tablespoons of olive oil to the quinoa we put in the mixing bowl before it gets hot, mix it well and let it cool. Meanwhile, cut 1 cucumber into thin slices and then cut them into cubes.
Let's chop 1-2 sprigs of spring onion into small pieces. Let's chop 3-4 curly leaves finely.
Let's finely chop about half a bunch of parsley. Finally, let's chop 1 tomato into small pieces.
After the quinoa has cooled, add 1 tablespoon of tomato paste and mix well.
Let's add the chopped lettuce, parsley, spring onion, cucumber and tomato.
Let's mix our curd by adding 1 tea glass of crushed walnuts, 2 crushed cloves of garlic, the juice of 1 lemon and 2 tablespoons of olive oil. Let's serve the ready-made quinoa kebab by placing it on a suitable serving plate. Enjoy your meal!
