Hey Friend, Come join me for some springtime backyard foraging. We are on the hunt for wild violet and dandelions to make some dandelion jelly and wild violet lemonade. Garden "weeds" can be so very useful! We are going to work on a project I've been wanting to complete for a while now too! Garden Seating!

Wild Violet Lemonade:
1.5 - 2 cups freshly picked wild violets
cover violets with 2 cups of boiling water and allow to infuse for 24 hours
Mix together 1 cup of sugar and 2 cups hot water, stirring until sugar is dissolved.
Add the juice of 12 lemons(about 1 3/4 cups) to the sugar mixture along with another 6 cups of cold water. Pour in your violet infusion and watch the magic happen!
Dandelion Jelly
4 cups loosely packed dandelion heads
remove petals from yellow base
steep petals in 4 1/4 cups hot water for 30 minutes
strain the petals from the water, measure out 4 cups and place in a saucepan, adding 1/2 cup lemon juice and 4 1/4 tsp calcium water(included in Pomona's pectin) to the mixture, bring to boil.
combine 1 cups sugar and 4 1/4 tsps. Pomona's pectin, add to boiling dandelion mixture stirring constantly. Wait for mixture to return to a boil and remove from heat. Pour mixture into jelly jars and process in canner for 10 minutes at a rolling boil.
Strawberry Scones
2 3/4 cups AP Flour
1/2 tsp salt
2 tsp baking powder
1/2 tsp baking soda
1/3 cup sugar
1 stick butter, cold and cubed
1 egg
1/2 cup milk
2 tbsp heavy cream
1 cup diced strawberries
mix the dry ingredients and add in cubed butter, working it with your fingers until crumbly. Add the wet ingredients, mixing until just combine. Fold in strawberries.
Cut into desired shapes, brush with heavy cream and bake at 400 degrees for 15-18 minutes.
Top with icing if desired
