Today, I make "Kalam Polo" (کلم پلو), which is Persian Cabbage & Rice. Like many other Iranian foods, there are regional differences and personal household differences in recipes. I wanted to show you my preferred version, which is a bit different than "Kalam Polo Shirazi", which is the more well-known style.
The differences include the type of cabbage used, and also, whether you are using meatballs or minced ground beef. This also makes for an excellent vegan dish if you exclude the meat, or use a substitute.
At some point, I will show you the "Shirazi" version as well, but for now, please enjoy my favorite Kalam Polo recipe.
