Recipe:
Here's a refreshing salad that you can make on a hot summers day, so nice and refreshing.

Here's the ingredients:
1 chicken breast - Shredded
1 medium carrot - grated
1 jar of Jr Lotus Roots
1 bunch Mint leaves - removed from stems
1/2 lbs of shrimp

Pickling the carrots and Jr Lotus Roots
1/3 cup of Sugar  
1 tbsp of Vinegar  
1 cup of warm water
Marinate in the fridge for 20 minutes.

Fish sauce:
1 cup of warm water
1/2 tsp of white vinegar
1/2 lime
1 1/2 tbsp of Sugar
2-3 tsp of fishsfauce
1 tbsp of chili sauce  


How to:
1) Remove the leaves from the stems of the mint leaves, wash and cut into small pieces.
2) Drain the water from the lotus root jar and slice them into half - length ways first and half them once done slicing.
3) Grate the carrots
4) Boil 6 cups of water and add the chicken breast. Boil until fully cooked. Remove and shred the chicken.
5) Then add the shrimps and run it under cold water to stop the cooking process. Peel the shrimps and slice them in half. Remember to boil the shrimps with the shells on.
6) Pickle the carrots and lotus roots and leave it in the fridge to marinate for 20 minutes.
7) In a large mixing bowl, add in your chicken, mint leaves, squeeze out the excess water from the carrots and lotus roots and add it into the mixing bowl. Then add in the shrimps,
8) Combine all the ingredients together.
9) Add in a few teaspoons of Fish Sauce
10) Best to keep this dish in the fridge before serving.
