Chicken Sukka | Dry Chicken

Mangalorean Chicken Sukka or Kori Sukka/Kori Ajadina (Tulu) is an Indian chicken dish native to Mangalore and Udupi region. The word "Sukka" comes from Hindi "Sukha" which means "Dry", sometimes also called as "Kori Ajadina". However it can be prepared in two variations: dry and semi gravy.

Ingredients:
Chicken 700-800 grams ( or 1 kg)
Onion 6 sliced
Shallots few (optional)
Tomatoes 3 sliced
Fresh coriander
Green chilies
Curry leaves
Red chili powder Kashmiri 1-2 tsp
Coriander powder 1tsp
Cumin powder 1 tsp
Red chili dry few
Mustard seeds 1/2 tsp
Cumin seeds 1 tsp
Turmeric 1/2 tsp
Ginger garlic paste 1 tbs

Dry roast Masala ingredients:
Cumin seeds 1tsp
Cloves few
Black pepper few
Fennel seeds 1tsp
Fenugreek seeds 1/2 tsp
Coriander seeds 1tsp
Curry leaves few
Green cardamom 2-3
Chana dal 1tsp
Dry red chilies 5-6

Recipe : dry roast on low flame, once aroma comes out, cool it down and make a powder. This dry roast masala would be used in recipe.

Let’s cook chicken………………….

Recipe:
Step 1: in a pan heat oil, add cumin, mustard seeds green and red chilies, shallots, onion and ginger garlic paste.

Step 2: let it cook for few minutes, add chicken turmeric, dry roast masala 1tsp, let it cook.

Step 3: add red chili powder, coriander powder, tomatoes cumin powder and dry roast masala 1 tsp

Step 4: It’s gonna take 25-30 minutes. Add onion and cook cook till chicken is cooked onion is brown and tomatoes are cooked.

Once ready garnish with curry leaves , freshcoriander,

And green chilies.
