You may not want to leave the dough in the fridge for a week before rolling it and then cutting it with the forms and baking it. But we do it that way because it's been proven to work. After that you can just review the parts that you want to make sure you remembered correctly. The key is to not let the gingerbread in the oven for too long because then the gingerbread will become too hard and dry. 7 minutes in preheated oven should be enough. At least check it then. You can always put it back in the oven for another minute or too if you want.
