RECIPE I CREATED (makes approx. 16 egg bites)
Preheat Oven to 350 degrees and grease muffin pan
Base
- 3 cups of egg whites
- 1/2 cup of low fat cottage cheese
- 1/2 cup of greek yogurt
- 1.5 tsp salt
Filling (use as much or as little of these ingredients you'd like)
- Roasted Red Pepper
- Baby Mushrooms
- Red Onion
- Jalapeño
- Trader Joe's 21 Seasoning Salute (Italian season would be good here too)
- Salt & pepper to taste
Prepare filling and set aside to cool down. Mix all the base ingredients together. Mix the base and the filling together and pour into muffin pan. Bake for approx. 40 minutes. Let cool slightly before devouring! Optional: drizzle sriracha over top!
