Instructions ---Prepare Dough First (You can use Whole wheat flour or All Purpose Flour / Maida) In a big mixing bowl, take flour, add salt and sugar. Mix Dry ingedients. Add milk (milk must be warm) and curd ( curd should be room temperature )and knead a soft dough. Knead the dough for 5 to 7 minutes. Apply some oil / ghee/ butter. You can use the Kitchen-aid dough maker or you can knead the dough with your hands too. The dough should be sticky and wet and grease it with oil / ghee/ butter. Cover the dough with wet cloth for an hour or two to ferment. After an hour you will see the dough has doubled in size. Leaving the dough for an hour is very important to get the soft kulchas. ---Meanwhile let do Stuffing for Aloo Kulcha Take boiled potatoes, keep them in fridge for 2 hrs to get cold. take cold bioled potatoes, peel, cut, mince it. or For Stuffing for Aloo Gobi Kulcha take cauliflower head, wash, cut, mince. Add salt and keep it aside for an hour to drain off excess of water. Add potatoes. Stuffing should be dry. Take all the ingredients given in video in a bowl. Mix them well and divide into 8 to 10 equal size balls. Keep it aside. ---Let's do layers now for Amritsari Kulcha Dust the working surface with a little bit of all purpose flour. Take out the dough onto the working surface Knead the dough once with help of little bit flour. Apply butter or ghee. Fold and repeat the process to make 3 layers of roll. Cut roll and divide them into 8 to 10 equal size balls. Cover them with wet colth. ----Let's Start Baking in oven Take one ball and gently press it out a bit. Place prepared stuffing ball in the middle and close it into a ball. Do the same process with the rest of the balls. Preheat Your oven @ 400 degrees F. You can use baking tray to bake kulcha. Take one ball and spread the dough using your finger or rolling pin into a thick paratha. Apply water and sprinkle some coriander seeds, kalonji or crushed anardana, and kasuri meethi or cilantro. Apply water on back side of kulcha and Place it on a baking sheet. Keep tray in lower rack and bake it in a preheated oven at 400 degrees F for about 4 minutes Now bake it in a preheated oven at 500 degrees F (250 degrees C) for about 4 minutes or until top is golden brown in color. Remove from the oven and apply butter on top. Amritsari Kulcha is ready to serve hot from oven, freshly baked at home. Apply butter or ghee and Serve them hot with Chole, sweet tangy chutney with onions, Dal Makhani or curd. Enjoy!!!
