How to prepare jackfruit:
EASY VEGAN BBQ
Drain and rinse 2 20-oz cans (or 3 15-oz cans) of jackfruit in brine or water (not syrup!)
Pick out some of the hard seeds that you find and massage the jackfruit a bit to break it up.
Soak it for at least 24-hours in filtered water (but if you can do 2 days that’s better…you wanna get that brine flavor out).
Drain it and squeeze out ALL the water.

Ingredients:
2 twenty oz cans of jackfruit in brine or water
2.5 cups of tomato
1-2 tsp sesame oil
5 minced cloves of garlic
1/2 inch of fresh ginger (i used powdered but it's just not as good)
1 green chili finely chopped
1/2 tsp black pepper
2 tsp coriander seeds
1 tsp cumin seeds
1 tsp fenugreek seeds
6 cloves
6 cardamom pods (if using ground use 1/2 tsp and add after jackfruit instead of toasting)
1 tbs cinnamon
2 tbs paprika
1 to 2 tbs brown sugar
1/2 tbs of salt
fresh coriander leaves (cilantro)

Recipe:
Start off with your heat on medium and add a splash of water
then cover your pan until little bubbles start to form
add the garlic, coriander seeds, cumin seeds, fenugreek seeds, cloves,  and cardamom pods
toast these spices in the water or oil
when your spices are golden brown almost blackened add your 2 and a half cups of strained tomato
now it’s time to add your jackfruit. if you are unfamiliar with how to cook unripe jackfruit refer to the link and the instructions above this recipe
now add 2 tsp of paprika
1/2 inch of fresh ginger (I used 1 tsp of the powder and it wasn't as good but whatevs)
1 tbs of cinnamon
1/2 tsp black pepper
1/2 tbs of salt
stir then cover and let the spices cook into the jackfruit for about 30 minutes
don’t forget to check every couple of minutes and stir so that the bottom doesn’t burn
after 15 of those minutes add your 2 tbs of brown sugar and stir
the jackfruit is ready once it starts to fall apart and had a browner color
this would be when you add 1 chopped green chili if you want it nice and spicy!!
once you turn off the heat, mix in a handful of fresh chopped coriander
and this is optional but i added 1 to 2 tsp of toasted sesame oil to give the gamey meaty taste that lamb flesh has (ew I know it's weird but it works)
ENJOY!!
serve along side of jasmine rice or in a naan wrap
