My Flavour-Packed Slow Cooker Bolognese

Today, I'm sharing a tasty Bolognese sauce recipe with a twist. It's made in a slow cooker, giving it 8 hours for the Italian flavors to really blend together. I like to use flat ribbon pasta, like linguine or fettuccine, instead of the usual spaghetti. The sauce clings to it, making every bite a 'wipe your mouth with every forkful' experience!

I cooked this in my Sage (Breville) Fast Slo-Pro, but the recipe below is for using a stove top pan then a traditional slow cooker, as I guess most would cook it this way. At the end of the day, they are essentially the same!

MY SLOW COOKE BOLOGNESE SAUCE
INGREDIENTS
1TBSP olive oil (or veg oil and a knob of butter)
4 rashers streaky bacon finely chopped
2 medium onions finely chopped
2 carrots finely chopped
2 celery sticks finely chopped
2 garlic cloves finely chopped (or 2tsp Lazy Garlic)
2-3 sprigs rosemary finely chopped
Fresh basil leaves finely chopped
1 stem of oregano finely chopped
500g beef mince
2 x 400g tins plum tomatoes
1 bay leaf
2TBSP tomato purée
1 beef stock cube
125ml red wine
8 Cherry tomatoes sliced in half
75g grated parmesan

TO SERVE
400g of you favourite pasta
25g grated parmesan

METHOD
Turn the slow cooker on high ready to receive the mix
In a pan, fry off the bacon in the olive oil, then add the onions, carrots, celery, garlic & herbs – sweat them down for about 10 minutes then transfer to the slow cooker
Add the mince to the slow cooker and add all the sauce ingredients to the slow cooker, mix and wait for 6-8 hours
Up to you what to do now: Eat or freeze but bear in mind that even though we Brits call it a Spaghetti Bolognese the best pasta to use for this is something like a bronze milled Tagliatelle, Linguine or Fettuccine where the sauce can stick to the rough surface.
