The pastiera is a typical dessert of the Neapolitan tradition made with shortcrust pastry, ricotta, cooked wheat, honey, orange blossom aroma, eggs and candied fruit. Recipe for 1 pastiera of 26 cm or 2 pastiera of 20 cm
Shortcrust pastry:
500 g flour 00
200 g sugar
250 g butter
salt
orange and lemon zest
3 yolks 1 whole egg
little milk if necessary
Stuffed
150 g milk
50 g butter
400 g cooked wheat
orange and lemon zest
400 g sheep ricotta
350 g sugar
orange blossom
50 g milk
4 eggs 2 yolks
40 g honey
70 g candied citron
70 g candied fruit salad
Orange peel
cooking time and advice:
180 degrees for 1 hour
according to your oven, it may be necessary to extend cooking for a few minutes or raise the temperature to 200 degrees. Each oven is different, keep an eye on your pastiera and adjust accordingly. The important thing is that it is nice dark both above and below, in this way you will be sure that it is well done. For better cooking, I suggest using disposable trays because they are thinner than the classic mold.
