Are you still buying puff pastry dough? I will show you how to make puff pastry dough step by step. You can store your homemade puff pastry dough in a fridge or freezer until you're ready to use it.

📋 Ingredients:
Pastry Dough:
Unsalted butter - 1 cup (227g)
All-purpose flour - 240g
Sugar - 1 tbsp
Salt - 1/2 tsp
Ice water - 7-8 tbsp
Vinegar - 1 tbsp

👩‍🍳 Instructions:
1) Place butter in the freezer for 15 minutes.
2) Whisk together all-purpose flour, sugar, and salt.
3) Add ice cubes to the ziplock bag. Stack two bowls and place the ice bag in between.
4) Coat the frozen butter and grater with flour mixture. Grate the butter and coat with the flour mixture.
5) Add vinegar to tenderize the dough.
6) Slowly drizzle ice water. Add just enough ice water so that it holds together without crumbling apart. If you overwork the mixture or add too much water, puff pastry will be tough.
7) Press down and gather the dough into a ball. Flatten it into a square shape, and wrap it in plastic wrap. Refrigerate for 1 hour.
8) Dust the work surface and dough with flour. Use less flour so the pastry doesn't get tough.
9) Roll, rotate, and flip to shape into a rectangle. Move the dough frequently so it doesn't stick to your counter. Use the ice bag to keep the work surface and dough cold. Avoid pressing too hard when rolling out the ends.
10) [FIRST FOLD]: Fold the dough in thirds like a letter.
11) [SECOND FOLD]: Roll into a rectangle. Fold in thirds.
12) Wrap the dough and refrigerate for 1 hour.
13) [THIRD FOLD]: Roll into a rectangle and fold in thirds.
14) [FOURTH FOLD]: Roll into a rectangle and fold in thirds.
15) Pastry dough is ready now! Wrap the dough and refrigerate for 1 hour to relax the gluten.
16) We are using only half of the dough today. Store the other half in the fridge for up to 3 days or in the freezer for up to 3 months.
17) Roll into a 5mm-thick rectangle and cut the dough.
18) Preheat the oven to 420°F (215°C). Bake for 25-30 minutes until golden.
19) Set aside to cool to room temperature.
