In this Pottery Barn video, founder of the Monterey Fish Market in San Francisco, Paul Johnson demonstrates how to prepare fresh dipping sauces quickly while the crab is steaming.

The recipe for making fresh crab dipping sauces is very simple. For making red pepper mayonnaise fresh dipping sauce, Paul starts with grated red pepper and mixes it with half a cup of mayonnaise. He then pours little amount of red pepper juice to thin out the mixture along with a touch of cayenne pepper. In the next step Paul adds a small quantity of Meyer lemon zest to add flavor and fragrance to it.

For making Thai Relish dipping sauce, Paul starts mixing all the ingredients including three tablespoons of chopped onion, three tablespoons of chopped red pepper, one tablespoon of chopped red chili, one teaspoon of salt, one tablespoon sugar, quarter of a cup of freshly squeezed lime juice, a quarter cup of rice wine vinegar and two tablespoons of ¬chopped cilantro in a bowl. For a great flavor and fragrance, he adds about a tablespoon of grated ginger as ginger complements seafood perfectly. The Thai-style fresh dipping sauce is absolutely ready to be served.
