This week’s video is caramel fig scones!
This is a type of scone that is crispy and light on the outside and moist on the inside.
The caramel flavor is rich and delicious because a lot of caramel sauce is added to the dough.
The crunchy texture of the figs is also good!

▶Ingredients (for 6 scones)

[Rum-soaked figs]
85g Dried figs
130g Gold Rum

1) Remove the stems of the figs and cut them into two pieces.
2) Put the figs and rum in a pot and boil over low heat for about 1 minute.
3) After storing in the refrigerator for more than a day, completely remove the moisture before use.

[Scone dough]
165g Cake flour
40g all-purpose flour
80g Unsalted butter
18g granulated sugar
1g Salt
6g Baking powder
37g whole milk
100g Rum soaked figs
45g Caramel sauce (Recipe: [Eng]절대로 실패하지 않는 솔티캐러멜 소스 만들기 Easy Sa...)

1) Put the powdered ingredients and diced cold butter in a food processor and chop until the butter is the size of a bean.
2) Add cold milk and caramel sauce and mix using a food processor.
3) When the dough becomes crumbly, add the figs, mix lightly a few more times, and then transfer the dough to the work surface.
4) Lightly knead the dough into a lump and let it rest in the refrigerator for about 30 minutes to 1 hour.
5) Divide the rested dough into six pieces and roughly shape them into round.
6) Apply milk to the surface of the scone with a brush and bake at 180 degrees Celsius for 17 minutes. (Wiswell Lumi Oven/Top/bottom heating + convection)
7) Finish by decorating with dried figs and caramel sauce drizzle.

* Storage: After cooling completely, you can enjoy it crispy up to the same day they're baked. (Leave the storage container lid slightly open. If it is completely sealed, the outside will become damp.) If individually wrapped and stored in the freezer, they can be stored for up to 3 weeks. When eating, defrost slightly and then reheat at 180 degrees Celcius for about 5 minutes. Then the outside will become crispy again.
