Besan Kofta Recipe

Ingredients:

* 1 pound (450g) potatoes, peeled and cubed
* 1/2 cup (100g) chickpea flour (besan)
* 1/2 cup (100g) all-purpose flour
* 1/2 teaspoon salt
* 1/2 teaspoon red chili powder
* 1/4 teaspoon turmeric powder
* 1/4 teaspoon garam masala
* 1/4 cup (60ml) vegetable oil
* 1/2 cup (120ml) water
* 1/2 cup (120ml) tomato sauce
* 1/4 cup (60ml) heavy cream
* Chopped cilantro for garnish

Instructions:

1. In a large bowl, combine the potatoes, chickpea flour, all-purpose flour, salt, chili powder, turmeric powder, and garam masala. Mix well to combine.
2. Add the vegetable oil to a large skillet over medium heat. Once the oil is hot, add the potato mixture to the skillet and cook, stirring occasionally, until golden brown on all sides.
3. Add the water to the skillet and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until the potatoes are cooked through.
4. While the koftas are simmering, make the sauce. In a small bowl, combine the tomato sauce, heavy cream, and salt. Mix well to combine.
5. Once the koftas are cooked through, remove them from the heat and add them to the sauce. Stir to coat the koftas in the sauce.
6. Garnish with chopped cilantro and serve immediately.

Tips:

* To make the koftas more tender, you can soak the potatoes in cold water for 30 minutes before cooking them.
* If you don't have chickpea flour, you can use all-purpose flour or bread crumbs instead.
* The koftas can be made ahead of time and stored in the refrigerator for up to 2 days. Just reheat them in the oven or microwave before serving.
* Serve the koftas with rice, naan, or pita bread. 1
