Hi guys. Welcome to Marks Home Kitchen where i do family friendly recipes that everyone can enjoy. Todays video is for a traditional Irish fruit soda bread. This bread uses no eggs or yeast, but uses bicarbonate of soda(not baking soda) and buttermilk reaction to help it rise.
When it comes to traditional Irish breads you need to taste, fruit soda bread is a must. The base for this bread is typically white soda bread, with raisins, sultanas, or dates added.
Like barmbrack bread, fruit soda bread is typically served toasted with butter and is less sweet than cake but sweeter than a standard loaf.


INGREDIENTS (make 1 loaf)
625g plain flour
1 teaspoon (generous) bicarbonate of soda
1 teaspoon salt
1 tablespoon brown sugar
450mls buttermilk
110g dried raisins
110g dried sultanas

METHOD
Preheat the oven to 200c(180c fan)
Mix the flour, bicarbonate of soda, salt, sugar and dried fruit in a large mixing bowl.
Add the butter milk in quantities of about 150mls at a time, mixing it in well until it forms a wet but sticky dough(you might not need all the buttermilk)
Flour your hands and work surface and knead the dough lightly by hand until the dough is smooth
Shape into a circle about 4in deep
Take a sharp well floured knife and place a deep cross on the top
Place on a floured baking tray and bake for 40-45 minutes
To see if the bread is fully cooked, tap on the bottom and listen for a hollow sound.
Cool on a wire rack or if you like a softer crust, wrap the bread in a linen or cotton tea towel.
